OUR WINES

THE VINEYARDS: TERRE DI SCOPETO AND TERRE DEL TURRONE

Our vineyards are bounded by four parishes on the lower slopes of the Bolognese Apennines, located between the Reno, Setta and Lavino river valleys.

Caccianemici vineyards are to be found in the hamlets of Scopeto and Turrone in the district of Sasso Marconi, areas with a rich history to be told. Scopeto, a place with the life-blood of a bygone age, is the land where we chose to grow the grapes from which we produce wines from native vines. Each one seeks to be a narration and a tribute to our territory.

The wine production in Turrone, instead, is driven by the spirit of experimentation, with a nod to the future without ever forsaking tradition.

OUR PHILOSOPHY

In nature, nothing goes to waste. Everything is transformed and generates new life.
The philosophy that underpins our project stems from the desire to put a high-quality, biodynamic product on the table, through the cultivation and mindful management of the soil following its natural cycles.
We started by converting all our vineyards over to organic vineyards, eschewing the use of all herbicides in favour of biodynamic substances to promote plant growth. The harmony between soil and vines is ensured by the spreading of animal and green manure to fertilise and improve its composition.

THE 2020 GRAPE HARVEST

Harvesting the grapes by hand into small crates guarantees that the raw material for our wines is treated with the utmost care.

At the winery, we only use spontaneous fermentation methods with native micro-organisms and grape skin maceration, avoiding any kind of chemical, clarifying or filtering treatments, to ensure the wine produced is completely natural.

Some of our wines ferment in Spanish terracotta tinajas, as this material best preserves the characteristics of the terroir.

OUR WINES

URSA

Made from the free-run juice obtained from the pressing of 100% Grechetto gentile grapes, followed by spontaneous fermentation and aging in stainless steel. The addition of its own must in the bottle obtains secondary fermentation. Needless to say, this wine undergoes no chemical treatment, is unfiltered and has no added sulphur dioxide.

RUGGIA

Made from a mixture of varying quantities of our white grapes, such as Pinot Bianc, Pinot Grigio, Picolit, etc. with spontaneous fermentation of free-run juice from pressing and grape pieces, followed by aging in stainless steel. Needless to say, this wine undergoes no chemical treatment, is unfiltered and has no added sulphur dioxide.

FILÌA

A native white wine obtained from the soft pressing of 100% Grechetto Gentile grapes, followed by spontaneous fermentations of the free-run juice and aging in Spanish terracotta tinajas. Needless to say, this wine undergoes no chemical treatment, is unfiltered and has no added sulphur dioxide.

OLOS

Made from a mixture of various amounts of our red grapes, such as Cabernet Sauvignon and Carménère, etc. with spontaneous fermentation of grape pieces, crushed grapes and free-run juice from pressing, followed by aging in steel. Needless to say, this wine undergoes no chemical treatment, is unfiltered and has no added sulphur dioxide.

ZENZA

A rosé made from the free-run juice obtained from the pressing of Barbera, followed by spontaneous fermentation and aging in steel. The addition of its own must in the bottle obtains secondary fermentation. Needless to say, this wine undergoes no chemical treatment, is unfiltered and has no added sulphur dioxide.

Our wines can be described as naturalbecause they are produced in full respect of natural agricultural cycles, without undergoing any kind of chemical treatment which could alter their fundamental essence.

Given that environmental sustainability is at the heart of our philosophy, we endeavour to safeguard the natural resources at our disposal and strengthen the ecological relationship between air, soil and water.
Our project features all aspects of biodiversity, which coexist in harmony to form a holistic whole, where everything is interconnected and goes beyond merely chemical and physical aspects.
This magical whole is our strength, this unique whole is our terroir.
